2. Sheet-Pan Sausage With Peppers and Tomatoes
I once emailed Ali Slagle, who wrote this recipe, to tell her how much I liked another clever sausage dish she had developed for NYT Cooking. She emailed me back this highly evocative and wonderful sentence: “Sausages should wear capes.” So true! Sausages are weeknight superheroes: Not only are they inherently delicious, they make everything around them delicious too, like the peppers and tomatoes on this sheet pan.
4. Skillet Hot Honey Chicken With Hearty Greens
Another smart one-pan recipe, in which the chicken thighs are seared to render their fat, and then that savory fat is used as the base for a dressing of chiles, honey and apple cider vinegar. Toss some sturdy greens like escarole or kale in that dressing, and you have a very, very good dinner.
