The start of the summer season brings an expected crop of new restaurants to the Hamptons, but this year, there are more than ever, with an expanded list of chefs and restaurateurs branching out from home bases in Manhattan. Not all will have their tables set by Memorial Day. Here’s what to expect.
Southampton
Blu Mar
Terrance Brennan, the highly regarded chef and restaurateur, is dipping his toes into Hamptons waters for the first time in his career with this spot, which he plans to keep open year-round. It’s in Harpoon House, a new hotel in what was once the Old Post House. The Mediterranean menu, a cut above many in the region, features white gazpacho, Marseille-style fish soup, fidelini with clams, lobster risotto, grilled fish with a choice of sauces, butter-poached halibut with seawater potatoes, and duck for two. Brooklyn Chop House Southampton
You can count on the restaurateur Stratis Morfogen to have a Hamptons restaurant. This season, it’s an East End version of Brooklyn Chop House (in Lower Manhattan, not Brooklyn), in which he is a partner. It’s installed at the Capri Hotel, where the restaurant held a pop-up last August. Mr. Morfogen’s signature satays and dumplings share the menu with steaks and seafood. (Thursday)

T Bar Southampton
Tony Fortuna is taking his Upper East Side favorite to the Hamptons this summer, in the spacious location that housed the Jue Lan Club. Steaks, seafood, pizza and sushi will be on the menu. (Friday)

Silver Lining Diner
Progress has been slow, as Eric Miller, the chef and restaurateur, and his brother, Marc, renovate and upgrade what was Princess Diner for an opening this summer. (End of June)

Water Mill
The Garden at Water Mill
The yellow house that was Robert’s for many years will not only be open this season, but also make use of its lawns and gardens for dining and outdoor activities. The owners are Joseph and Siobhan Miller, first-time restaurateurs, and there will be a program of guest pop-ups during the summer, starting in July with Uchi from Austin, Tex. (May 29)

East Hampton
Bel Mare Ristorante
Formerly Michael’s, the space is now an Italian restaurant with a pizza oven and a fairly classic menu from the chef, Luigi Del Conte, who sells his own line of sauces, including several used in the restaurant. (June)

Bostwick’s on the Harbor
This grander branch of Bostwick’s Chowder House on the Montauk Highway will have seating on a large porch tailor-made for sunset views over the water. Seafood will dominate the menu. (Early June)

Carissa’s
The esteemed baker, Carissa Waechter, who has a shop in East Hampton, will open a larger facility nearby. It will have more production space open to view, a retail bake shop and a restaurant where soups, sandwiches, salads and roasted chicken will be served by day. In the evening, it will become a full-service restaurant with the chef de cuisine, Molly Levine, in charge of a constantly changing menu serving local ingredients. (Early July)

Paola’s East
This summer, there will be no Eleven Madison Park vacationing in the Hamptons as EMP Summer House. In its place, the stately white farmhouse and grounds will house a branch of Paola’s Restaurant, an Upper East Side anchor for decades. Stefano Marracino, the son of Paola Bottero, the founder, will oversee the restaurant, which he is hoping to run on a year-round basis. The menu will be Italian, but with an emphasis on seafood and local produce. The whitewashed interior will have black accents, and there’s likely to be an indoor-outdoor raw bar. (Friday)

Amagansett
Coche Comedor
Next door to its taqueria La Fondita, Honest Management Group, which also owns Nick & Toni’s in East Hampton, has opened a Mexican restaurant featuring a wood-burning grill and rotisserie, and homemade tortillas. Joseph Realmuto, Nick & Toni’s executive chef, is in charge.

Morty’s Oyster Stand
The former Cyril’s Fish House is in the hands of Jeremy Morton, Jack Luber and, from Ferris in Manhattan, Charles Seich. They have put the chef Sam Talbot in charge of the casual seafood kitchen, featuring local catches along with elevated fare like fluke and octopus ceviche, olive oil-steamed mussels and hanger steak with chimichurri. Ed’s Lobster Bar East
A breezy East End edition of Ed McFarland’s established SoHo spot will offer a similar lineup of lobster rolls and chowders, as well as new items, like lobster pizza and fish sandwiches. It’s at the very edge of the village, where Main Street becomes the Turnpike. (Saturday)

Sel Rrose Montauk
This branch of the Lower East Side restaurant bearing a variation on the name coined by the artist Marcel Duchamp will showcase local oysters and orange wines. Expect a busy lounge. (June 8)

Showfish at Gurney’s Star Island Resort & Marina
The chef Jeremy Blutstein is in charge of the elaborate seafood menu at this property, the former Montauk Yacht Club and a newly renovated addition to the Gurney’s portfolio. Locally harvested ingredients become fluke crudo and roasted tilefish. The complex includes the Pool Club for casual fare and Il Forno with Italian takeout. (Friday)
