The ground rules for safe canning and preserving have been adjusted over time, as science weighs in. The Penn State Extension will give up-to-date information in a series of webinars for the next time you eye baskets of ripe tomatoes and Kirby cucumbers at farm stands or gather them from your garden. On Wednesday, canning tomatoes and salsas will be covered. On Aug. 24, the subject will be freezing, and on Aug. 27, the topic is fermenting pickles and sauerkraut. The sessions, all from 1 to 2:30 p.m., are $5. In the coming months, sessions about wild game and drying foods will be offered. Some previous webinars are also available, free.
