Do you care how fresh your rice is? The Rice Factory does. The company, with outlets in Singapore, Taiwan and Hawaii, has opened a trim shop in Scarsdale, N.Y. Their rices, nine kinds from various Japanese prefectures, are imported fresh and unpolished, and are kept in temperature-controlled conditions. They are polished at the store and sold in dated two- to 15-pound bags. The store, and its website, offers information about each rice’s flavor, texture and suggested use. It also carries rice cookers, condiments and rice accessories. Rice Factory rices are sold in Japanese markets in New York, including Sunrise Mart, Dainobu and Oishinbo in Harrison, N.Y.
