An online marketplace for Greek specialties has been introduced by Diane Kochilas, the chef and cookbook author, who has chosen each item. In addition to expected products like dried oregano, honeys, oils and olives, she has included some uncommon selections from various regions in Greece, including crusty rusks made from heirloom grains; a dense and tangy tomato-caper spread; and meaty oven-dried “prune” olives, the damaskinoelia variety from Argos in the Peloponnese. Pickled, pleasantly chewy caper leaves could be used in salad, especially with tomatoes, as they are on Santorini, or to garnish baked fish. Jammy spoon sweets come in offbeat flavors like bergamot and sour cherry. The cherry, in particular, is a nice addition to your old-fashioned.
