MasterClass is a series of online courses, from a company that has assembled an impressive roster of experts on a host of topics, including Bob Woodward, Spike Lee, Margaret Atwood, Frank Gehry, Serena Williams, Steve Martin, and, for food, Thomas Keller and Alice Waters. This week the pastry chef Dominique Ansel joins the list. His 17-lesson course on French pastry fundamentals covers fruit tarts, chocolate cake, chocolate bonbons, croissants and yes, the Cronut, with each session 10 to 20 minutes, give or take.
