The minute there’s a nip in the air, the broths, and particularly bone broths these days, emerge. Here’s a new one that I would not hesitate to shamelessly call my own. Mother Wit is the brand, and it’s owned by Nicole O’Brien, a self-taught chef who owns the Pandering Pig, a tiny Franco-Californian bistro in Upper Manhattan where the rich, deeply flavored organic chicken broth is made. It’s sold frozen, in 32-ounce pouches. Soon it will be joined by a vegan broth fortified with tomato, and by spring, beef bone broth will join the line.
