Tomer Botner, an industrial designer, started making Florentine kitchen knives in his apartment in Tel Aviv, in the Florentin neighborhood. He kept the name of the company after relocating to Barcelona with his wife, Noam Blumenthal, and his stunning knives are now available online. Each knife he sells is custom-made from a choice of blades (French carbon steel or Swedish high carbon stainless steel) and handles (striped micarta — a composite of various materials sealed in a plastic resin — and wood). There are three models: a paring knife with a 4-inch blade; a dramatically curved and beautifully balanced chef’s knife, with an 8-inch blade, and a steak knife. Mr. Botner has a few in stock, ready to ship. Custom orders take 10 weeks.
