What this summer will be like, with the possibility of sitting — maybe six feet apart — on a boardwalk overlooking the ocean, remains to be seen. Red Hook Lobster Pound
At this lobster and seafood spot, you have your choice of lobster roll styles. The classic is made with mayonnaise-dressed lobster salad, while the Connecticut is the brown butter version. There are also lobster roll BLTs and a Tuscan-style lobster roll dressed in basil vinaigrette, $26 to $28. And perhaps a lobster claw Bloody Mary with that ($14)?

Goldbelly
On this website, several Maine lobster companies are selling kits containing lobster meat, dressing and buns, sometimes with extras. Quantities to serve two to a dozen are usually available. The components are also sold separately at some businesses. Delivery is included: Eventide Oyster Co., in Portland, sells a brown butter lobster roll kit with bao buns serving four with the option of four whoopie pies or oatmeal cream pies for $99. Hancock Gourmet Lobster Co., in Topsham, has a kit with lobster roll fixings for six plus six whoopee pies, $129. McLoons Lobster Shack, in South Thomaston, has a lobster roll kit for two for $55.
Luke’s Lobster
This national chain, which got its start in New York and has several locations in the city, is not doing takeout or delivery, but it is shipping lobster meat from Maine in eight-ounce portions (enough for two to three rolls) for $25. A package of 8 buns is $4.
Maine Lobster Now
Lobster kits from this Portland, Maine, company serve six, and consist of a pound of lobster chunks with rolls, potato chips, a jar of mayonnaise and a stick of sea salt butter for $99.99.

The chain’s restaurants, including the Manhattan locations in the theater district and TriBeCa, are offering lobster rolls for $15 each for takeout. In many locations it’s available every day. Buy two, and they’ll donate another one to first responders.
