Fournos Theophilos, a new Greek market and cafe, had an unlikely beginning. It started as a partnership between George Korres, a pharmacist, and Nikolas Paschalakis, a computer expert, who wanted to showcase Greek food with a contemporary twist. They have hired two chefs originally from Greece, Yannis Tsiakos and Dionisis Liakopoulos, to accomplish that goal. The spacious establishment will sell olive oils, olives, rice and other Greek groceries, as well as food to take out or eat in. (Table service is available on the balcony.) Sweet and savory Greek phyllo pies, including deconstructed ones in cups, are arranged on a long counter. An open kitchen in the rear serves salads, soups and hot dishes like braised lamb with crispy pancetta, yogurt and lemon confit.
