Their book tells you all about the avocado and provides recipes in which puréed avocado quietly lurks (pancake batter, banana cake, crab cakes) or struts out front (many toasts, Caesar salad, frozen paleta bars). There’s even a step-by-step guide to making an avocado “rose.”
