Suzanne Dumaine — a trained chef, recipe developer and writer — is flying solo at her own West Village grocery and cafe, Three Owls Market. She’s stocking the shelves with items that look to Italy, like pastas, cheeses, olive oils, sauces and a small selection of everyday food staples. Chickens raised in the Catskills are burnished on a rotisserie. There are prepared dishes like broccoli with gremolata, Negroni-cured salmon tartine and porchetta, to take away or to order at a counter all day and evening, and tables set to one side of the double storefront. As for the name, she said it relates to a bedtime story about three owls that her father used to tell her.
